Cupcakes with blueberries and lemon glaze

Ingredients:

For cupcakes:
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup butter, softened
1 cup of sugar
2 large eggs
1 teaspoon vanilla extract
1 cup of milk
1 1/2 cups fresh blueberries
For lemon glaze:
1 1/2 cups powdered sugar
Juice and zest of 1 lemon

Instructions:

Turn the oven on 180 degrees. Prepare cupcake molds lined with baking paper.

In a medium bowl, mix the flour, baking powder and salt.

In another bowl, beat the butter and sugar until light and fluffy.

Add the eggs one at a time, beating thoroughly after each addition. Then add the vanilla extract.

Gradually add the dry ingredients to the butter and sugar mixture, alternating with milk.

Carefully add the blueberries and mix gently.

Pour the dough into the muffin molds, filling them 2/3 full.

Bake the cupcakes in a preheated oven for about 20-25 minutes or until golden brown.

While the cupcakes are baking, prepare the lemon glaze. In a bowl, mix the powdered sugar, juice and lemon zest.

After baking, remove the cupcakes from the oven and allow them to cool slightly before applying the glaze.

Apply lemon icing on top of the cupcakes and let it set before serving.

Serve and enjoy the blueberry and lemon icing cupcakes!
